The Taggiasche olive harvest goes on average from October to March. A few hours after the harvest and they are immediately processed in order to safeguard all the organoleptic properties. They are calibrated and destined for the brine (mixture of water, salt and aromatic herbs).

After at least 6 months of natural fermentation in the preserving liquid, made up only of water, salt and aromatic herbs, as per tradition, they will be ready to taste, perfect for an aperitif or as a condiment for pasta.

They release all the typical aroma and flavor of Taggiasca olives. Soft pulp and aromatic flavor enriched by the aromas of aromatic herbs, used for the brine.

THE PRECIOUS TAGGIASCA OLIVES

The "Taggiasca" is a typical olive of Ponente Ligure , in particular of the province of Imperia and is characterized by its unmistakable aromatic and fruity taste .

It is one of the rare examples of production based on a "monocultivar ", the fruit of which has an elongated cylindrical shape, slightly enlarged at the base, with a color that varies from shades of green to purple.

After harvesting, the olives are divided by size: those that will go to the mill and those that will be pickled or in oil.

Taggiasca olives are a basic ingredient of Ligurian cuisine and thanks to their delicacy , they manage to enrich flavors without overpowering them.

Also ideal as a condiment for pasta , added to tomato sauce.
