The Dentex, with its blue back and silvery-yellow sides, is a voracious predator that alternates between pursuit and stalking: its favorite preys include silversides, small needlefish, sardines and octopuses. Immediately after fishing, the snapper meat is "processed exclusively by hand in Italy": careful cleaning and a long washing in running water precede the phase in which the meat is eviscerated, filleted and divided into slices; then follows the cooking "in water and salt" before expert hands proceed to cut into fillets. At this point the red snapper fillets are ready to be ordered in the glass jar and covered to the brim with excellent low acidity olive oil to guarantee long conservation.
