Mackerel, a typical blue sea fish belonging to the Scombridae family, has a spindle-shaped body and small fins, and is a voracious predator: mackerel feeds on fish and small animals. As soon as they are caught, the processing of the fillets is carried out in an artisanal way to keep the organoleptic characteristics unaltered and to amplify the taste and goodness. The cooking phase in water and salt - which follows washing, gutting, filleting and cutting into slices - has the function of degreasing the mackerel meat. After cooking, the fish slices are cut into fillets and placed in jars filled with low acidity olive oil for long conservation.
