 "Taggiasca" quality pitted olives (61%), extra virgin olive oil (36%), salt, natural flavourings. Acidity regulator: citric acid. The olives are pitted mechanically, therefore the product could exceptionally contain pits or fragments of them

The Taggiasche olive harvest goes on average from October to March. A few hours after the harvest and they are immediately processed in order to safeguard all the organoleptic properties. They are calibrated and destined for the brine (mixture of water, salt and aromatic herbs), then married in extra virgin olive oil.

They release all the typical aroma and flavor of Taggiasca olives. Soft pulp and aromatic flavor enriched by the scents of extra virgin olive oil, used as a brine.

THE PRECIOUS TAGGIASCA OLIVES

The "Taggiasca" is a typical olive of Ponente Ligure , in particular of the province of Imperia and is characterized by its unmistakable aromatic and fruity taste .

It is one of the rare examples of production based on a "monocultivar ", the fruit of which has an elongated cylindrical shape, slightly enlarged at the base, with a color that varies from shades of green to purple.

After harvesting, the olives are divided by size: those that will go to the mill and those that will be pickled or in oil.
