It comes from the collection by bees of nectar from several varieties of flowers on spontaneous blooms in pristine areas, it crystallizes spontaneously and has the most varied pollen content.

Once the super has been inserted into the hive, it takes 7-15 days for the bees to complete the frames with the honey. Each frame contains about 2/2.5 kg of honey covered with a wax operculum. Leaning the frame on a lectern, the frame is uncapped, "freeing" the honey inside. It is a unique phase full of aromas and scents. Subsequently, the frames are placed in a centrifuge which will proceed with the mechanical extraction of the honey.

Once extracted, the honey is left to rest in a tank to proceed with the extraction of the last parts of wax inside.

Sweet taste and variegated aroma more or less intense, or dark with a full, marked flavour, with a more or less bitter aftertaste.

Satisfying on its own, it's a healthy and excellent snack spread on lightly toasted bread; a spoonful of cooked apple puree is also a welcome use, mixing a few drops of lemon
