Amberjack is one of the finest fish whose excellent and exquisite lean meat is compact on visual examination and with a delicate flavor when tasted. After fishing, the amberjack fillets are processed in an artisanal way according to ancient fish processing techniques capable of enhancing its quality and genuineness. The meat is cleaned and washed in running water, gutted, filleted and cut into slices. This is followed by cooking "in water and salt" which guarantees the non-alteration of the organoleptic properties. Finally, the fillets are sorted manually into the jar, which is filled with low acidity olive oil for long conservation.
