It is the best known and most appreciated honey by virtue of its unique characteristics and peculiar qualities.

Appearance has very light color, from almost colorless to straw yellow; at an organoleptic level it is generally liquid; the light or slightly fruity smell recalls that of flowers. The flavor is decidedly sweet, fine and velvety, with very slight acidity: the sensation of sugary syrup is surprising; the aroma is very delicate, typically vanilla, candy, not very persistent and without aftertaste.

Once the super has been inserted into the hive, it takes 7-15 days for the bees to complete the frames with honey. Each frame contains about 2/2.5 kg of honey covered with a wax operculum. Leaning the frame on a lectern, the frame is uncapped, "freeing" the honey inside. It is a unique phase full of aromas and scents. Subsequently, the frames are placed in a centrifuge which will proceed with the mechanical extraction of the honey.

Once the honey has been extracted, it is left to rest in a tank to proceed with the extraction of the last parts of the wax inside.
