Delicate pâté produced exclusively with the pulp of olives of the prized “Taggiasca” variety.
The cream obtained, soft and velvety, is then immersed in extra virgin olive oil in order to guarantee a long conservation and complete the quality and refinement of this gastronomic excellence.

"Taggiasca" quality olives in brine, pitted (80%), extra virgin olive oil (18%), salt, aromatic herbs (thyme, bay leaf, rosemary). Acidity regulator: citric acid. (Attention: the olives are pitted in an automatic cycle, therefore the product could exceptionally contain pits or fragments of them).

The Taggiasche olive harvest goes on average from October to March. A few hours after the harvest and they are immediately processed in order to safeguard all the organoleptic properties. They are calibrated and destined for the brine (mixture of water, salt and aromatic herbs).

Once the stone has been removed, the olives are ground - skilfully mixing the pulp and extra virgin olive oil - and packaged without preservatives.

The delicate and immersive taste of the pate produced with our best selected olives reminds us of our beloved Liguria and takes us back home with taste and thought.

THE PRECIOUS TAGGIASCA OLIVES

The "Taggiasca" is a typical olive of Ponente Ligure , in particular of the province of Imperia and is characterized by its unmistakable aromatic and fruity taste .

It is one of the rare examples of production based on a "monocultivar ", the fruit of which has an elongated cylindrical shape, slightly enlarged at the base, with a color that varies from shades of green to purple.

After harvesting, the olives are divided by size: those that will go to the mill and those that will be pickled or in oil.

Taggiasca olives are a basic ingredient of Ligurian cuisine and thanks to their delicacy , they manage to enrich flavors without overpowering them.

Also ideal as a condiment for pasta , added to tomato sauce.
