Pan del Pescatore (or Pandolce Genovese) is one of the typical desserts of the Ligurian tradition, obtained from a mixture of very fine shortcrust pastry enriched with selected pine nuts, tasty raisins and precious candied fruit.

It is a different dessert from the ordinary, soft, with a slightly lowered round shape, still made as in the past, skilfully combining the best, healthy and genuine ingredients of poor Ligurian cuisine; in particular the use of olive oil instead of butter is decisive for its lightness.
