Worked with the traditional method based on manual skill, on the same day of fishing to ensure the brilliance of the fish. The anchovy fillets are washed and put in salt; at the right maturation they are cleaned, deboned and arranged naturally in jars "by hand" and covered with perfumed olive oil.
