Swordfish is a fish with white, firm flesh and a delicate flavour, which due to its characteristics (it has no bones or thorns) is also appreciated by those who do not like fish-based dishes. The swordfish meat - immediately after fishing - is processed and preserved in an artisanal and natural way, with techniques of ancient origin. After cleaning and washing in running water, the swordfish is eviscerated, filleted and divided into slices, ready to be cooked using the traditional cooking system in water and salt, to degrease it as much as possible, keeping the organoleptic characteristics unaltered. In the final phase, the swordfish is placed in a glass jar and covered with low acidity olive oil in order to guarantee a long conservation.
